A Refined Cold Treat Made Using Unrefined Sake: Doburokku Gelato



Made using "Koji"; A gelato with the full taste of rice

"Doburokku" is a gelato using "koji", a type of yeast made from rice or barley, which has the deep and subtle flavour of rice. Koji is also part of "doburoku" (note the different spelling!), a type of unrefined sake.

Made from rice grown using spring water from the base of a natural monument

"Dokuroku", the sake, was first made by people at home when a tax on alcohol was enforced. This rustic, and sweet sake is still popular today. Fermented using rice, koji and water only, it is drunk unfiltered.
