“Stephen Tranche, Executive Pastry Chef at Mandarin Oriental Tokyo, produces a live-kitchen event for the limited seats of 8 guests only, on 3 dates this summer. Chef Stephen’s World, to be held on August 7th, 14th and 21st of 2019, as self-explanatory, is an exciting event in which you can enjoy a first-row experience on the counter seats viewing the Executive Pastry Chef in action creating the luscious and splendid world of sweets and pastries.
Stephen Tranche, since joining Mandarin Oriental as Executive Pastry Chef in 2017, has constantly created playful sweet delicacies incorporating Japanese culture and Japanese ingredients. The cake named “Kumo (“cloud” in Japanese) ®”, which cages varying Japanese seasonal ingredients in an edible casing that resembles a floating white cloud, has enchanted the fascinated confectionery lovers in Japan with its adorable visual impact and light texture that melts easily in the mouth. Before his current job, Chef Stephen first worked as an apprentice to Pierre Gagnaire, a three-star chef, became Pastry Chef at Pierre Gagnaire à Tokyo, and had returned to Paris to work at various prestigious establishments including Hotel Plaza Athéné. The dolces created by the hand of Chef Stephen with this brilliant and world-class career behind him, are reminiscent of fantasy world of fairy tales and picture books, while backed by solid techniques.

The flamboyant story to be experienced with Chef Stephen’s World has a course structure and starts with amuse, followed by bread, savory, sweet & sour, dessert, and ends with petit four. With the counter seat of Oriental Lounge on the 38th Floor as a live performance stage, Executive Pastry Chef’s mastery and techniques, which can rarely be seen, are on offer for close-up view only for a few select guests.
In addition, as a seasonal delicacy, Mango sweets are on offer at the Mandarin Oriental Gourmet Shop on the 1st Floor from June 1st. Sweets produced by Chef Stephen including “Mango and Tahiti Vanilla Mousse” as well as 8 types of bread by the Chef Baker are available for purchase. At the Oriental Lounge on the 38th Floor, Premium Mango Afternoon Tea, which uses mango abundantly, can be enjoyed, as a limited offer for one month only from July 1st.
