On Friday, December 2025th, 12, a one-night-only special dinner will be held at the French restaurant "Estelle by Alain Ducasse" on the 5th floor of the Palace Hotel Tokyo, featuring Didier Depond, CEO of the legendary Champagne house "SALON."

In the world of Champagne, where grape blending is the norm, SALON is committed to using a single vineyard, single variety (Chardonnay), and single vintage, and uses only the first pressing of the juice. With an uncompromising attitude and overwhelming rarity, SALON has built up supreme brand value and captivated connoisseurs around the world.



This dinner will feature two types of champagne: the ripe "Salon 1997" and the "Salon 2015," which is full of potential, as well as three different types of champagne from sister house "DELAMOTTE." It will be a luxurious dinner that will allow you to experience the worlds of both houses, each with its own contrasting personality, all at once.

The chef will be Kei Kojima of "Estelle by Alain Ducasse," who has been described by Alain Ducasse as "the Japanese chef who best understands and practices my philosophy." This dinner will feature a sophisticated course incorporating black truffles and gold caviar, allowing guests to enjoy the exquisite pairing with champagne.
