Wako Annex's "SHIKI Parfait" series, which reflects the changing seasons, is introducing the fourth winter parfait, "SHIKI Parfait -FUYU-," for a limited time until Saturday, February 28, 2026.
In 1988, he opened a chocolate shop in Ginza as a pioneer of Japanese chocolatiers.

"SHIKI Parfait -FUYU-" is a winter chocolate parfait that features apples as the main ingredient, layered with spices and chocolate to create an adult taste. Apples are slowly compote at low temperature, and are topped with mellow red wine jelly, berry sauce, and spices such as cinnamon and cloves, creating a fragrant world unique to winter.
The top layer is topped with juicy Red Delicious apples and a spiced berry sauce. The pure acidity of the fruit brings out the rich flavor of the chocolate ice cream. The middle layer features white chocolate crunch and pie crust for texture, while the bottom layer features cinnamon-flavored ice cream, chocolate sauce, and red wine jelly, quietly evoking the deepening of winter. The rich, tangy bitter chocolate and fruit flavors are layered one on top of the other, and the flavor changes with each spoonful, adding to the charm.

Additionally, the cake and chocolate shop on the first floor will be offering two types of "SHIKI Chocolat Frais -FUYU-" that are linked to the parfaits. The "Fraise Framboise" is decorated with raspberry crisps, and the other is a two-layered cake made with white chocolate, strawberry ganache, and raspberry pâté.
The other, "Pomme Cannelle," is a single piece of apple ganache topped with crunchy layers of praline, feuilletine, and cinnamon, offering a rich and deep flavor.
