Hiramatsu has opened a new restaurant, HRMT STAGE, in Ebisu, Tokyo. Hiramatsu has been a leader in Japanese restaurant culture for over 40 years, and this new space will see them reexamine the traditions they have cultivated to date and pass them on to the next generation.
The restaurant's name "HRMT STAGE" is a combination of four meanings: Harmony, Restructure, Moment, and Tradition. It embodies the restaurant's desire to foster happy moments where the people who cook and the people who eat come together and their sensibilities intersect.
The core of the cuisine at "HRMT STAGE" is the clear flavors symbolized by the stock and broth. Based on the techniques that Hiramatsu has honed over the years, it combines ingredients carefully selected by chefs from all over the country with the creativity of multiple chefs to present a new era of French cuisine. In addition to course meals, à la carte dishes are also available, making it an appealing choice for casual dining.
The interior design was handled by nendo, a design office led by Oki Sato. Based on the concept of "STAGE," the space is designed to naturally highlight the food and the movement of people, without relying on excessive decoration. Centered around the open kitchen and counter, the design makes the sounds, aromas, and even the movements of the food being prepared part of the experience.
At HRMT STAGE, the people who cook and the people who eat share the same time, just like watching a stage performance. Why not enjoy a moment that stimulates your senses in a simple yet dramatic space?
