"Oshokuji Kayano-ya," run by Kubara Honke, known for its "Kayano-ya Dashi" (soup stock), offers dishes that utilize the flavors of each season, based on the concept of "dashi cuisine that is in harmony with the seasons." Now, a summer-only "dashi-dressed noodles" dish has been released.

Perfect for the hot season, the cold "Dashi-Aemen" (noodles with dashi broth) is a new menu item that combines Kayano-ya's signature dashi broth with noodles, resulting in a dish that is flavorful even when cold. What's more, you can choose your favorite dashi broth, noodles, and toppings to create your own personalized bowl.

You can choose from Kayano-ya broth, chicken broth, shiitake mushroom broth, bonito broth, kelp broth, and dried sardine broth. For noodles, you can choose from Chinese noodles, udon noodles, or konjac noodles. In addition to beef shigure, pork shabu-shabu, steamed chicken, and colorful vegetables, there are also plenty of additional paid toppings available. You can also enjoy variations in flavor by adding free toppings such as fresh shichimi spice and yuzu pepper.
