What is the traditional Japanese color "Koitama"?
The traditional color known as "konran" (濃卵) is a deep, reddish-yellow derived from the darkest color of egg yolks. While the general color of egg yolks is called "tamago-iro" (卵色), this color is characterized by its rich, deep hue reminiscent of a darker yolk. Each egg yolk has a slightly different color, but this difference is not due to taste, but to the pigments in the feed the chickens eat. For example, corn makes the yolk yellow, rice makes it whitish, and adding paprika is said to increase the redness. Konran is also a color that arises from these differences in feed, and can be said to be a color that reflects the small variations in nature.
Koitamago (thick egg)
Fresh eggs are characterized by having a slightly firm white and a plump, rounded yolk. "濃卵" is pronounced "koitamago."
