“Hibi no Ryori Biora” opens in Hiroo, Tokyo, making kaiseki cuisine more accessible

A wonderful Japanese restaurant that feels like a hideout recently opened in Hiroo. Its name is ``Hibi no Ryori Biora.'' This restaurant was created by Kazuko Goto, who was born in Kyoto's Mushakoji Senke family and is active as a culinary expert, and her daughter Sumire, who want to pass on Japanese culture to the next generation.

 

``Biora'' is a restaurant where you can enjoy 1 soup and 3 side dishes carefully prepared using the finest ingredients, based on the tea kaiseki culture and way of thinking that Kazuko has cultivated over many years. Freshly cooked, glossy rice, seasonal dishes, and mildly flavored soups. You can experience a casual yet loving and nourishing time that will remind you of the important things that exist in your daily life.

 

 




The origin of ``Biora'' seems to have come from Sumire, who grew up watching her mother work as a cooking researcher. Sumire's goal was to open her own shop someday, and the project was started with the cooperation of Masanori Yokogawa, Welcome Co., Ltd., with whom she had been in contact for some time. Just as Kazuko has naturally transformed what she inherited from her mother, Chisumiko, into her own form, Sumire will continue to pass it on to the next generation.

 

 

Among them, aemono is one that we put a lot of thought into. A dish that incorporates the passion of ``Biora'', which takes advantage of the flavors of seasonal ingredients and is casually elaborate. It is served in large quantities at lunchtime, and served as an appetizer at night.

 

 

 

 





In addition, he seems to value the people and ingredients he has met through his past activities and connections.The long-established restaurant "Fuka" in Kyoto has created "Shojin Ramen," which was once served at New York's Shojin Ryori "Kajitsu." It seems that ``Sakura Ebi Sushi'' was inherited from the famous restaurant ``Suehiro Sushi'' in Shimizu, Shizuoka. All of them were made with great care and had a gentle and deep flavor. Kazuko was moved by the food, and found it truly delicious, and I could feel her dedication to carefully preparing and serving the food she wanted to convey in a typical Biora style.





Most of the wood in the restaurant is made of solid wood, and you can feel the natural scent of wood from the tables illuminated by warm light, creating a warm space. You can feel the joy of living in Japan, where the four seasons are beautiful, through the food, the tableware, and the way it is prepared.
