This time, I would like to introduce three recommended gourmet burger shops in Tokyo. Including Azabu-Juban "Aldebaran" introduced last time, this makes the top four.
I think the number one in Tokyo is Aldebaran in Azabu-Juban. This is a restaurant that is also known as the best in Japan.
Long-established "7025Franklin Avenue"
It's a very pleasant place and the food is of course excellent.
Tokyo is a hotbed of gourmet burger action.WEBSITEThere is a hamburger restaurant that is said to be delicious above.10There are more than 1000 eaves, and they seem to be competing closely. However,10After visiting more than 100 restaurants, I realized that even restaurants that are ranked highly on Tabelog are often places that make you go, "Geez, seriously, I can't eat that bad food." We've carefully selected the best restaurants to bring to you.
"7025 Franklin Avenue" can be said to be a pioneer of gourmet burgers. It is a detached shop at the entrance to a residential area at the foot of Gotenyama, a hilltop known as an ultra-luxury residential area in Shinagawa Ward.
When you enter the restaurant, you'll be surprised by the spaciousness and sunlight pouring in through the windows. The tables are spaced far apart, making it a very comfortable place.1990Although the store has been around for quite some time, having been established in 1997, the flooring inside is shiny and every corner is sparkling clean.
And all the staff are brisk and clear-spoken, and there is not a single lazy person. Oh, this is the feeling of a long-established restaurant. There is a refreshing feeling that is similar to that of the famous Western restaurant "Kamiya."
We were shown to a seat at the counter, so the hot plate was right in front of us. At the grill, located in the center of the restaurant, the veteran manager and his right-hand man were earnestly handling and grilling orders one after another. The tension was palpable throughout the restaurant.
Including that, the whole store has a great atmosphere. It's rare to find a store with this kind of atmosphere.
Now, it's time to eat. The French fries and onion rings I ordered as sides arrived. Both were a nice golden brown. The French fries were fried crispy and had just the right amount of saltiness. The onions are fried once and then frozen, which destroys their cells. They are then fried again, which gives them a bubbly, mashed texture and makes them delicious. There were foreign letters on the bags, so both were frozen products (probably imported from overseas). It's a shame that they're not homemade, but they were very tasty, so I'll let it slide.
The shopkeeper is1980Apparently he studied hamburgers in Los Angeles, USA for five years from 2000. So, when asked if it's American style, he recommends both the American way of eating it with your hands and the European way of eating it with a knife and fork. No, you shouldn't eat it with a knife and fork. I'm sure it started with some high-class lady coming down from Gotenyama to the earth and saying something like, "It's too big for my mouth. Can I borrow a knife and fork?" (← this is just a fantasy). People like that shouldn't even be eating hamburgers in the first place (I think).(笑)
So I ordered the simplest hamburger, and since I'm not a high-class guy, I decided to gobble it down in one bite. It was a bun, a beef patty, thinly sliced tomatoes, thinly sliced onions, a few lettuce leaves, and a small amount of pickles. Of course, the bun and the patty were the best.90I decide the taste of about 100%. I like the buns that are warmed on the hot plate. It doesn't say anywhere, but I'm sure the patty isUSIt must be beef. It's not the coarsely chopped beef that's popular these days, but minced meat. It's more classic than the heavy meat that's served these days.
At first, I tasted only the bun and the patty. The black pepper was prominent, the fat was thin, the red meat tasted good, and the meat juice was overflowing, making it truly ideal. Next, I tried to combine it with the other ingredients in my mouth, and this was also so delicious that I couldn't help but groan. Even though it contained vegetables, it wasn't watery at all (this is an important point). Mustard and ketchup were also provided, but there was no need to add them.
Cheap, vulgar hamburgers go really well with vulgar coke, but the burgers at this place are very refined and don't go well with coke. The coke ruins the flavor of the burger. Maybe tea would go well with it. That might be rare. Maybe it's because it doesn't contain bad fat and the bun is high quality.
There are a lot of side dishes, so I would like to come with about four people and order soup, salad, fried chicken, and other things to share. In fact, I saw many customers who came in large groups. The clubhouse sandwich and egg sandwich that I saw from the side also looked very delicious. It's a great restaurant. I'll definitely be coming back.

"THE BURGER SHOP" comes with vegetables
It's a rare burger restaurant that uses its brains.
Because my workplace is close by,20I've probably been there about times. Whether I go there during the day or at night, I've only ever encountered unfriendly and unenthusiastic staff, which is quite unusual for a burger restaurant.BGMOlivia Rodrigo'sR&BNevertheless.
I think this was where they made a burger for former President Trump when he first visited Japan.
The burger that Trump ate is on the menu (Steakhouse Burger), but it's twice as big as a normal burger, with three beef steak patties and four slices of cheddar cheese, and it looks crazy. Of course, it's double the price. I don't know if the former president was happy with it or not.
This restaurant serves burgers without any vegetables. The vegetables are served in a separate container with mayonnaise. Lettuce, tomato, onion, and pickles are chopped finely. That's a good point. It's very difficult to put vegetables in a burger from the beginning and still make it taste good.
Speaking of another restaurant, I went to a super famous restaurant in Minato Ward, and the fat from the meat and the moisture from the tomatoes, lettuce, and pickles made the bottom third of the bun soggy that I couldn't hold it any longer. The liquid was accumulating on the paper. The bacon was also smelly. It was inedible. I stopped eating halfway through. There are a lot of restaurants like this that just make things by habit without any thought.
Generally speaking, hamburgers are
In an industry like this, the people at this store are quite clever.
So, I tried it. I usually don't order bacon. In most restaurants, it's just greasy and smelly. I've never had a good experience with it. So I ordered the avocado cheeseburger.
Everything came on one plate. The French fries were the same size as McDonald's, but ours were crispier and much tastier. First, I bit into the burger. The bun is grilled on the outside, which is a feature of this restaurant, and is very tasty. And the patty isUSAlthough it is beef, it is somewhere between coarsely chopped and minced meat, with plenty of juice, less fat and a rather refined taste.
The way I recommend is to not put all the vegetables in at once, but to put only the amount you will eat in one bite, which is a bit of a pain. This way you can prevent the bun from getting soggy. If you mix the vegetables in homemade mayonnaise and put it in the burger, it tastes much better than if you had it without the vegetables. The flavor of the finely chopped vegetables really comes through. It's quite an invention. I think other restaurants should try to copy it.
Heinz ketchup and mustard are on the table, but it's better not to add them so that the original flavor is not lost. By the way, the chicken nuggets were normal. The fact that they are open from noon to night is also a big plus.

"Burger POLICE(Burger Police)
The best thing is the French fries!
I thought "Burger Police" was a pretty uncool name, but it's right next to Himonya Police Station, so it's called "Police". Is that really the right reason to decide on a restaurant name? (laughs)
Although it varies depending on the item, the restaurant uses shank and neck meat from carefully selected Japanese Black Beef cattle for its patties, and it has a huge fan base.
The first owner was the owner of the famous Italian restaurant "Tacubo" Chef Takubo is the chef of the restaurant. Therefore, the selection of cold and hot dishes is outstanding. To introduce a few, there is mushroom potage, oeuf mayonnaise and truffle mayonnaise, Wagyu beef tartare, Nichinan chicken nuggets, shrimp and avocado fritters, omelette with crab cream, and more. If you have room in your stomach, you will want to order all of them.
The burger itself is completely free of tomatoes, lettuce, and other vegetables, based on the idea that adding vegetables would make the burger watery. This was a brilliant idea.
Currently, Chef Kubota is not involved with the restaurant, but the original policy is still alive and well. Therefore, this place should be called a burger bistro, where you can order various things other than burgers and drink alcohol. The main focus is burgers. That's the way to enjoy it.
The young man at the restaurant was very friendly and explained everything to me in detail. First, there was the "Shio Burger" that the restaurant recommends. This is a bold burger that consists of a crispy, hard bun and a medium-rare, grilled black-haired wagyu beef patty. The wagyu beef is simply seasoned with salted butter, pepper, and salt.
The meat is from the shank and neck, and my teeth can catch the tendons here and there. It's chewy and has a good amount of the umami and sweetness of Japanese beef, but when I tasted it as a burger, I felt something was off. Hmm, isn't it a bit harsh to have just meat and bread without any sauce? Even though it's called Kuroge Wagyu, it's still shank and neck. I thought the same thing when I tried the number one Japanese burger, Aldebaran, but everyone is rushing to get coarsely chopped meat, but is that really the best? Depending on the item, wouldn't smooth minced meat like a normal hamburger be better? I added the optional wild mustard grain mustard, which changed the flavor and made it delicious.
Next up was "The Burger," which was also recommended by the restaurant. It was topped with a Wagyu beef patty, Bolognese sauce, cheddar cheese, and a fried egg. As usual, it had no vegetables. It was piping hot, and my hands got quite hot holding the burger. However, because it had so many ingredients, unlike the "Salt Burger," the flavors were layered, and when I tasted everything in one bite, the unity was quite delicious.
Yes, the French fries have a slight consommé taste, are different sizes, and come with the skin on. I think they're outstanding. Maybe even more memorable than the burger?

What does "If you don't eat this, your life is ruined" mean?
When he hears something delicious, he rushes east and west to eat it all. Rumor has it that he might be the Brillat-Savarin of Reiwa, or even the return of Furukawa Roppa. Bassey is an editor with over 40 years of food-loving experience. A heart-wrenching gourmet essay.
Author profile
Bassey is a foodie who has been eating around for over 40 years. In addition to Japan, he regularly goes to Hong Kong to eat Chinese food at his own expense, and also travels to Taiwan, Singapore, Bangkok, and Seoul for delicious food. During his time as the editor-in-chief of a travel magazine, he visited many Michelin-rated restaurants around the world, especially in Europe, and later on in the World's Best 50 restaurants. We want everyone who loves food to try ``Crab Miso Bean Paste Noodles'' from ``Tenkorou'' (Hong Kong). Actually, I like the Chinese food at this restaurant the best in the world. Another example of the best Western food is "El Seger de Can Roca" from Girona, Spain, which was ranked number one on the World's Best 50 list. Ah, I want to go there again.
