Ko-so Cafe Biorise is located in Tokyo’s Ebisu, and serves drinks and meals that uses mainly organic vegetables and natural ingredients which are carefully selected. The cafe avoids the use of any animals products, eggs, dairy products and chemical seasonings.
Rie Nakamura, a former volleyball player from the national team of Japan produced the cafe. After her own experience with illness, she had became interested in food, and later lead her to open the cafe. The cafe offers options of gluten-free, vegetarian macrobiotic, and certified halal.

The keyword of this cafe is koso (enzyme). The cafe’s koso are prepared by condensing four kilograms of natural ingredients into a liter of stock solutions, and followed with the fermentation and ageing to make enzyme stock solutions and enzyme pastes. The natural ingredients are composed with 88 varieties of sprouted brown rice, wild grasses, vegetables and fruits. The enzyme stock solutions and enzyme pastes are used in all of their menu items.
Curry rice are usually high in calories, but Ko-so cafe offers them in low calories by making them gluten-free and oil-free. The curry paste is made by boiling 18 varieties of vegetables and is later seasoned with the original spice blend. The sweet and spicy curry rice is a popular menu at the cafe.
18 varieties of vegetables are brought to boil in order to make the curry paste and later topped with 10 varieties of grilled vegetables.
The Detox Brown Pancakes are made from buckwheat flour and brown rice flour. The dough is made from roasted brown rice, which includes dietary fibers and the whipped cream is made from soy milk. The pancakes are topped with plenty of fruits such as strawberries and cranberries, and still the total calories of this menu goes below 300 kilocalories.
The Beauty Fiber Smoothie is made of ginger and avocado and the Green Power Smoothie is made of spinach and komatsuna (Japanese mustard spinach).
The interior is decorated with natural colors.
The cafe servers organic teas, organic coffees, more than 10 varieties of smoothies and other healthy drinks. The roasted brown tea is made of roasted brown rice and it helps the body to detox with its rich dietary fibers. Ko-so cafe is the place where people with dietary restrictions can gather and enjoy their meal without any concerns.
