Ai Hosokawa first ate chicken sashimi at her friend's house in Kagoshima. Later, she heard from a friend who is a chef that Arizono Chicken Restaurant is recommended for ordering chicken sashimi, and she says that when she cooks chicken dishes, she often orders chicken sashimi from Kagoshima.

Torisashi is ``tataki'' made by lightly grilling fresh chicken. Chicken sashimi can be made with thigh meat, breast meat, or fillet, and is often eaten with ginger, garlic, chili pepper, small onion, wasabi, and Kyushu's sweet soy sauce. It is also a standard menu item at izakaya bars, and is often served on the table when family members gather together.

Arizono Chicken Shop's torisashi is available in free range chicken and young chicken. The skin of free-range chicken is burnt on a burner, giving it a chewy texture and a deep flavor.Although there are different tastes, it is preferred by young people. The young chicken is also grilled on both sides, making it soft, easy to eat, and fragrant. It is said that it is eaten by a wide range of people, even the elderly. Each pack has thigh meat (red meat) and breast meat (white meat), and each package contains half and half meat.

Remove the seeds and stems from the bitter gourd and green pepper and slice them thinly.
Separate the coriander into stems and leaves.
Soak in ice water, drain thoroughly, and serve in a bowl.
Add chopped green citrus.
Chill the chicken sashimi well, then cut into thin strips and place in a bowl.
Place the sauce ingredients in a small plate.
Each person puts the chicken sashimi and vegetables on a small plate of sauce, squeezes the citrus of their choice, and eats.

Peel the garlic, put it in a jar, pour rice oil or Taihaku sesame oil to cover it, and refrigerate. The oil has a slight garlic scent, so it can be used in sauces, aemonos, noodles, stir-fries, etc.
