Graduated from Tsuji Cho Group French School at the top of his class. A young chef representing Japan who has had a brilliant career at famous restaurants in Japan and France. In January 2020, he opened his own store "élan" in Omotesando. In addition to offering dishes that combine traditional French cooking techniques with his own sensibilities, he also holds cooking classes for children as part of food education and beekeeping for the circulation of the natural environment.Élan means "leap of life" in French. The chef's wish is for people to freely express their creativity through taste.

 

Born in Tokyo in 1988. After graduating from high school in Tokyo, he entered Tsuji Culinary Arts College. He graduated from the French school at the top of his class and went to Maison Troisgros (now Troisgros) in Roanne. Since then, he has worked at L'Osier in Ginza and Hôtel de Crillon in Paris, before moving to ESqUISSE in Ginza in 2012. Since 2017, he has served as sous chef. He is the first Japan representative for "San Pellegrino Young Chef 2015". In January 2020, he opened his own store "élan" in Omotesando.
