In winter, “kobako crabs”—as female snow crabs are known in Japan—are laden with both fertilized and unfertilized roe, making them one of the Noto Peninsula’s best-known seasonal delicacies. For conservation reasons, however, they can only be caught two months of the year, November and December.
For those seeking a Noto crab experience this year, a local onsen inn Notonosho’s New Kaiseki “Kano Crab Couple’s Plan,” is available until December 28. (Kaiseki refers to a traditional multi-course Japanese meal.) Guests who select this this plan will enjoy an extravagant dinner of the finest kobako (female) and Kano (male) snow crabs, brought ashore right in Ishikawa Prefecture.
Kano crab arai: Tender raw crabmeat chilled in ice water
The aperitif is kobako crab kotsuzake, a kind of sake flavored with crab. This is followed by crabmeat and Noto-grown vegetables with Rikyu (sesame) dressing, crabmeat sushi, and Kano crab arai—tender raw crabmeat chilled in ice water. From start to finish, no part of your Kano and kobako crab “couple” goes to waste.
Other courses include charcoal-grilled Kano crab, simmered crab butter (kanimiso) shabu-shabu, and kobako crab kamameshi (rice pot). Each diner is served the equivalent of three full kobako crabs and one Kano crab in total, adding up to an incredible bounty of flavor. Before dinner, guests can enjoy the gentle alkaline waters of the onsen while taking in spectacular views of the Sea of Japan.
